Lockdown Food



Here's a great veggie dish which is ideal for these long lockdown days - a Cauliflower Cheese and Pasta Bake.

Ingredients

1 large cauliflower cut into small florets
250 grams of penne pasta
100 grams of frozen peas

Sauce ingredients

500 ml of milk
50 grams of unsalted butter 
50 grams of plain flour
2 teaspoons of Dijon mustard
200 grams of strong cheddar or other strong cheese
salt and pepper 

Method

Add the pasta to a big pan of boiling water
After 5 minutes cooking add the cauliflower florets
After 10 minutes cooking in total remove, drain and set aside

Melt the butter in a saucepan and add the flour
Cook until a gentle heat for 2 or three minutes to make a roux
Add the milk a little at a time to make a white sauce
Add the cheese, Dijon mustard, frozen peas and salt and pepper

Mix all the ingredients together, check for seasoning and pour into a baking tray. Scatter Panko breadcrumbs over the top and sprinkle with some smoked paprika

Bake for 20 minutes in a medium over and serve with a green salad and, if you fancy, a nice glass of wine.
