Teriyaki Salmon


My new Japanese inspired diet is going well.

The plan is to eat more fish - much more fish - which I love anyway and here's a tasty treat that I rustled up at the weekend.

Teriyaki Salmon

Ingredients
1 (or more) good thick Scottish salmon steak/s - smoked is good as well as unsmoked
3 or 4 tablespoons of Teriyaki sauce - or good soy sauce with a pinch of sugar added
1 thumb sized piece of fresh ginger
2 cloves of garlic
1 or 2 tablespoons of groundnut or other oil for shallow frying
Pepper to taste
A few drops of seasame oil

Method
Slice the garlic and ginger - and put in a bowl along with the Teriyaki or soy sauce
Leave in the marinade for an hour
Heat up a frying pan - until it is smoking hot
Drain the fish
Add the oil to the pan and sear the salmon - about 2 minutes a side for slightly underdone
If you want the fish cooked right through allow 3 minutes a side
Put the fish on your serving plate to rest for a minute or two
Meanwhile put all the marinade back into the ban and let it bubble up - pour what is now a lovely sauce over your salmon
Sprinkle with black pepper

Serve with some crispy iceberg lettuce, some sliced red onion - and cherry tomatoes.
