Baked Potatoes - Cheap, Nutritious and Tasty
One of my favourite dinners is Baked Potatoes which sounds a bit mundane although with a little effort you can have a cheap, nutritious and tasty meal.
First off make a big batch because it costs the same to bake 12 potatoes as it does just one - and they can be easily reheated in a microwave once they've been baked in the oven.
All potatoes has 'eyes' and little imperfections, but this is a good thing because you want to cut these out and use the holes to season the potatoes with olive oil, salt and pepper.
Get your hands in there and work some olive oil into the skin along with salt and coarse black pepper into all the gnarly bits - I use a mortar and pestle.
Once you're done they should look something like this - then pop them into a hot oven for around 1 hour at 190 degrees centigrade.
I like to serve the baked potatoes with tuna, egg mayonnaise and tomato salad.
Along with baked beans and grated cheese, what else?
When the potatoes come out of the oven the skins should be really nice and crispy!
