Kedgeree and 'Wilson's Catch of the Day'

I have decided to make a batch of Kedgeree over the Christmas weekend and pick up my order of smoked haddock from 'Wilson's Catch of the Day' tomorrow.

Here's how I make one of my favourite dishes.

Ingredients

6 smoked haddock fillets

2 cups of Basmati rice

1 medium sized red onion 

3 tablespoons of curry paste (home made or bought) 

1 big handful of raisins

1 sweet and crunchy apple (Pink Lady is good)

2 handfuls of cashew nuts

6 eggs

1 handful of cherry tomatoes, some spring onions or other crunchy salad items, eg chopped red peppers and sugar snap peas work well

Big handful of coriander and parsley - mint is good too

Method

1) Poach the smoke haddock in a cupful of water - and set aside

2) Cook 2 cups of Basmati rice and set aside

3) Hard boil the eggs and set aside

4) Chop the onions and cook until soft in a little groundnut or vegetable oil

5) Add the curry paste, raisins and cook for a few more minutes -and  set aside

6) Put the cooked rice into a large serving dish and add the curry sauce - mix well 

7) Chop the apple and other crunchy salad ingredients and mix everything together including the mixed herbs - check for seasoning

8) Break the smoke haddock into decent sized pieces and add to the mixture - keep some of the nicest pieces for the top

9) Decorate the finished dish with quartered pieces of boiled egg and scatter the rest of the herbs over the top

Serve with some fresh yoghurt, hot chilli sauce and some flat bread

I was at Wilson's Catch of the Day yesterday to pick up some smoked haddock to make one of my favourite dishes - Kedgeree.

Last orders for Christmas have to be in for 10 December - and collection days are 22nd, 23rd and 24th!

Good fishmongers are hard to come by these days, but here's a one which also doubles up as a well stocked mini delicatessen - I'm paying a visit this morning! 


Wilson's 'Catch of the Day' in Glasgow's Finnieston has wide range of fresh fish and shellfish - and their staff could not be more friendly or helpful. 


My staples are haddock, smoked haddock and smoked mackerel. 


But there's lots more too including tuna, halibut, monkfish and mussels as well as lovely deli items such as quality chorizo and spices. 


On my last visit I stocked up on ingredients to make a Catalan fish stew which turned out really and fed 6 very hungry people!
