Pan Con Tomate - Catalan Tomato Bread

So here's my recipe for Pan Con Tomate - a staple dish from Catalonia which is great on its own or with a kinds of tasty morsels. 

3 ripe (the riper the better) tomatoes or a big handful of  small cherry tomatoes
1 small onion 
2 inch piece of cucumber (peeled) 
3 or 4 cloves of garlic
3 or 4 tablespoons of olive oil
2 tablespoons of good sherry (Jerez) vinegar  
Salt and pepper
Optional - a good pinch of parsley or basil 

Whizz everything up with a hand blender, check and adjust the seasoning and serve on stale bread with extra olive oil drizzled over the top.
