Corned Beef Hash



Corned Beef Hash is one of my favourite breakfast dishes - here's how I make mine.

Ingredients (for one)
1 medium sized cooked potato - cut into cubes (leftover baked potatoes are ideal)2 tablespoons of olive oil
1 small red onion or shallot - finely chopped
100 grams of good corned beef
1 egg - sunny side up
A good dash of Worcestershire sauce
Some freshly ground black pepper and salt to season
Handful of coriander or parsley 

Method
Soften the onion in the oil for three or four minutes 
Add the potato and fry over a medium heat until they start to take a little colour and catch at the edges
Add the Corned Beef, black pepper and Worcestershire sauce and turn down the heat
In a separate pan start to fry your egg
Check the seasoning - serve the potato, onion and Corned Beef mixture in a nice plate, top with the fried egg and scatter your parsley over the top 
Splash on some hot chilli sauce
