Corned Beef Hash



One of my favourite 'comfort' foods I make occasionally is Corned Beef Hash topped off with a free-range fried egg and lashings of American-style hot sauce.

Ingredients 

500 g of good quality potatoes 
250 g of good quality corned beef
100 g of garden peas or sweetcorn
Oil for frying
1 medium sized red onion
1 big handful of fresh parsley
1 free-range egg per serving
Good plash of Worcestershire sauce
Salt and pepper 
Hot sauce 

Method

1) Peel the potatoes, cut into bite sized pieces and cook in salted water until tender but still with a bit of 'bite' - set aside

2) Chop the red onion and cook over a medium heat for five minutes or so. Add the potatoes and continue to cook until the edges being to 'catch' and turn crispy.

3) Add the garden peas or sweetcorn, parsley salt and pepper plus a few generous splashes of Worcestershire sauce.

4) Serve in a nice bowl topped off with a free-range fried egg, lashings of American-style hot sauce and a final sprinkling of parsley.
